Bill Licea Kane will help you celebrate a belated Mardi Gras with King Cake Baking on February 23 at 7 pm via Zoom. Get out your Mardi Gras beads and join the fun!
Not sure of what a King Cake is?

King cake is one of New Orleans’ local delicacies. There are as many variants as neighborhoods in New Orleans, but the best known is a round braided brioche with warming spices (usually cinnamon, nutmeg, and brightened with lemon peel), smothered with white icing and sugar sprinkles that salute the official colors of Mardi Gras: Green for faith, purple for justice, and gold for power. There’s a trinket, usually a plastic baby, hidden inside each one.

We’ll be doing a nouveau variant, actually an old world confection, the Galette de Rois, brought back to NOLA by Sista Teedy (Tricia Boutté, who is Lillian Boutté’s and John Boutté’s niece). This is a puff pastry and frangipane cream cake that can be put together in a half hour. At least with a little help from do-ahead pastry creme and puff pastry.
